2 potatoes
1 small onion,sliced
1 small green pepper,chopped
4 eggs
1/4 cup cream
1/4 teaspoon dried oregano leaves
1 cup grated cheddar cheese
1 tablespoon oil
Cook potatoes about an hour before serving,cut them into 2 cm cubes.Heat oil in pan,add potatoes, fry until golden brown; drain on paper towel.Pour off excess oil,add onions ,fry until lightly browned,add pepper.Cook few minutes minutes,stirring .
Beat eggs with cream and oregano,add to the pan with potatoes,onions and pepper.Stir constantly over low heat until mixture is just begging to set.Remove from heat,lightly stir in cheese.
Serves 2.
