4 round crisp bread rolls
150 g spinach leaves,chopped
20 g butter
1 onion,chopped
8 bacon rashers,diced
4 eggs
Cut slice from the top of a bread roll and reserve.Scoop out the inside leaving a thin shell.Boil spinach for 1 minute,drain and sauté in hot butter for 1 minute.Drain and divide between bread rolls.
Saute onions and bacon in a pan until tender,spoon over spinach.Break eggs into each bread roll and replace lids.Wrap bread rolls in aluminium foil and bake in moderate temperature for 15 minutes.Remove from oven,stand 5 minutes before removing foil.
